Uncle Bobs Bakery
This weeks review saw me visit one of the baking industries most respected business operators . The Noy family are icons of the baking industry particularly in QLD. I was about to smash a legendary Uncle Bobs Bakery 🥧 and man I was a tad excited. Brett Noy has three locations, but this review was being conducted at his Belmont store. The other 2 locations are Thornlands and the Red Land Bay Area.
This location has been around for 27 years and one of the original shops in the complex. Brett and his father Robert have been around the traps for many many years. Robert (Brett’s dad) 🥧 journey is remarkable and one that started back in 1958. Robert worked in several locations around Brisbane including the original Arnott’s biscuits factory. By the time he was 22 he was legally blind. That’s right he had absolutely zero vision what-so ever. This set back wasn’t going to slow his down or stop him from what he did best and that was baking exceptional bread and bloody awesome 🥧’s.
After several years in Brisbane, the family packed up and headed to Barcaldine a small country town in western QLD !!! One of my favorite towns and a place I lived too. The 🥧 journey continued back to Brisbane where Brett was starting to make his own mark in the 🥧 game. Some time later the lads opened up the store at Belmont and never looked back.
These days Brett and his wife manage 3 locations, one 🥧 factory and over 60 staff. This legend is also heavily involved with various charities. This is a huge operation as I found out. The Belmont’s store work area is massive and every staff member knows their roll. This place runs like clock work.
The longer we chatted the more I was totally blown away for Brett’s passion for making quality and healthier baking options. This all starts with the place where Brett sources his meat (Maranoa Beef) and the way it’s prepared and cooked. I was just about to experience this first hand and I couldn’t wait.
This weeks 🥧 to review was a group decision. Brett and the front counter ladies all voted I should try the Lamb and Rosemary 🥧. It looked and smelt great. So I had no issues with this selection and i was ready to rip in.

1. Value for Money – $6.30 is pretty good value, for the quality of ingredients that was in this 🥧. Lamb isn’t cheap and that needs to be taken into consideration. The 🥧 was fairly decent in size too. 8.5/10
2. Meat Ratio – 90% full !!!! Maybe a little bit of room under the lid, but not much. Overall very good. 9.5/10
3. Meat Flavor – My favorite part about this 🥧 by a county mile. The meat was up there with the best I’ve had. The taste was superb !!! The rosemary seasoning was just enough. This was a perfect flavored 🥧. 10/10
4. Pastry – The base was a tad thick and slightly under baked and I mean slightly. The top was perfect. Stability was also perfect. This 🥧 wasn’t going any other place apart from my mouth. The pastry also had a terrific buttery flavor. 9/10
5. Temperature – Perfect temp !!!! 10/10

This was a quality 🥧 made with quality ingredients. The meat was cooked to perfection. No additives or preservatives in this 🥧 what so ever. The flavor was the standout. The pastry base was a tad thick but still had a incredible buttery flavor. Overall this was a very good 🥧 and I would have no hesitation going around again.
This bakery is a Brisbane icon and for good reason too, thus making this place a must visit. It has absolutely everything you need and I mean everything !!! If you think the 🥧’s are good, you’ve gotta try the legendary sourdough !!!! It’s off the charts.
As always a huge thanks to Brett and the team from Uncle Bob’s Bakery for their hospitality. The family story behind this successful business is incredible. It’s one of sheer hard work, determination and a never give up attitude. This place is a serious operation, from the state of the art equipment to the highly skilled staff everything about this place oozes class. Brett your a extremely busy man and I’m so grateful of the time you shared with me, I walked away truly inspired.
