A few weeks ago I had to race up to the NSW town of Goulburn to watch junior footy trials. I thought while I was there, I would pop into the iconic Trappers Bakery Goulburn to do a review. Trappers is located just off the Hume Highway exit in Sowerby Street near the “BIG RAM” .
The bakery is currently owned and operated by the Woodman Family. The family has been in the area for many years, mainly in farming, then in 1998 they ventured into motels which they still run today (right next to the bakery). 2006 was a massive year for the family, they purchased the nearby Braidwood bakery in February that year then built and opened Trappers in its current location in October that year.
Sadly I didn’t get to meet Keith (The Trapper) on the day of the visit, but I did catch up with his daughter, Jeanette. This is a family business with every member of the Woodman family including extras chipping in and all doing there part.
This place gets stupid busy and I mean stupid !!! To put things into perspective, the bakery has served over 120,000 people in the last 3 months, and no that’s not a typo. Apart from QLD’s Yatala Bakery this is the busiest bakery I’ve ever seen, I was totally blown away.
Despite the volume the wait times are short and the products available will cater for everyone. Fresh products are consistently being added to the cabinets and the huge pie warmer. Speaking of 🥧’s, Jeannette was under the pump making coffee’s and I needed to go watch some football, so we got cracking.
If your’re looking for a gourmet 🥧 on the menu you won’t find it here. What you will find is 9 or 10 solid traditional old school flavours. Once again I went straight to my go to flavour, “Chunky Pepper”
🥧 THE REVIEW 🥧
1. Value for Money – Look it wasn’t the heaviest 🥧 but it was more than reasonable value. The 🥧 weighed in around 220 grams which is right on industry standard. Diameter and depth were also acceptable. Overall solid value without being spectacular. 8/10
2. Meat/Fill Ratio – While the 🥧 was full, I would have liked to seen a couple more chunky bits of meat. Gravy ratio was slightly higher than the meat, but once again still very acceptable. 8/10
3. Flavour – Nothing fancy but a really solid pepper flavour throughout and slightly on the hotter side which I enjoyed. While it packed a little punch, it’s a flavour that will cater for everyone. Thoroughly enjoyed. Good job 8/10
4. Pastry – Pics will show the overall pastry was pretty good. Shape, shrinkage and stability were all on point and all just about perfect. Top bake thickness was excellent but a smidge and I mean smidge under done. Bottom bake was baked right through which was great, but it was a little to thick. Only minor points but clearly visible. I thought the color of the 🥧 was excellent and the pastry had a really nice flavour to it. 8/10
5. Serving Temperature – This little bugger was a tad hot and I had to wait a minute or two before digging in, nothing major though 9/10

I’m using this word a lot in this review, but this was a solid 🥧. Nothing fancy but a honest chunky pepper steak 🥧 and pics will support this. No this 🥧 wasn’t made specifically for me, it was grabbed out of the warmer like everyone else’s. $7 in this day and age is still very reasonably priced. The 🥧 needed a little more meat and the score reflected this. The flavour is where it counts and that aspect was very good. The pastry was solid (there’s that word again) and the pastry flavour was more than acceptable. I think the overall score reflected the 🥧 I had and I wouldn’t hesitate having another one. Good job team.
If your traveling along the Hume Hwy and need a break this place is 100% worth stoping into. There is heaps of parking, plus stacks of tables and seating. The fire place inside the bakery is stunning and on a cold winters day this would be roaring.
Jeanette thank you so much for coming back to me and allowing me to share your families 🥧 journey. You guys have a serious operation here and after seeing it first hand it’s very impressive. The sheer volume of people that come through your doors in a month is more than most bakeries get in a year. Your families 🥧 journey is quite remarkable with absolutely no baking experience whatsoever. Over the years, through hard work you have created a place where 🥧 enthusiasts can sit and relax and enjoy your products. See you the next time I’m passing through, Glory Glory to South Sydney.
