Three Mills Bakery

After leaving Elaineās Gourmet Pieās, I had a short trip around the corner to my next review. The next place on the list was Three Mills Bakery. This joint is a household name in Canberra and is mainly recognized for its huge range of Sourdough bread
and pastries.
The man behind the sourdough is a fella called Jarrod Deaton. With no baking experience at all he opened up his first bakery back in 2016. Fast forward eight years and this thriving business now has 6 locations and that employs over 140 staff, now thatās amazing.
Its newest store opened only days ago at Harris Farmers Markets at Majura Park. OMG !!! this joint was was out of control busy, with a line up around the block to buy their sourdough. Yes Iāve tried the sourdough and itās extremely good, but I came for the š„§ās and it was time to head to the warmer and get stuck in.
Only three flavours available on the current menu, so this weeks choice was an easy one. Iām a beef man all the way so the āBeef Pepperberryā š„§ was this weeks š„§ of choice.
š„§ THE REVIEW š„§
1. Value for Money – Yes !!! $10 isnāt cheap. Waygu beef would easily be put into the gourmet class section when judging. The š„§ was a decent size in weight and diameter and was full. Wagyu beef is not cheap !!! With the cost creeping up to $60 to $70 a kg itās a expensive cut of meat to add into a š„§. Overall this š„§ was reasonable value at 10 bucks 7/10
2. Meat Ratio – Completely full and at $10 you would want it to be. Iāve gotta say the waygu meat chunks were huge as well 10/10
3. Flavour – The flavour couldnāt be faulted !!! It was just about perfect. The waygu beef melted in your mouth. The other ingredients included, native pepperberry, a mixture of chilliās and seasoned beef jus and they all complemented this š„§ beautifully. Every bite was exactly the same right to the very end. Great job guys, lovely flavoured š„§ 9/10
4. Pastry – A real mixed bag here !! Shape and colour were great as was the top bake, couldnāt fault these. The middle had sunk a bit and shrinkage in sections was clearly evident. Bottom and sides were well under baked and the bottom was oily, which made eating this š„§ a little difficult as it was falling apart. Overall work to be done on the times and temp for the bake out. If they get this right you would see a significant change to the appearance 5/10
5. Serving Temperature – Serving temp was a tad hot but nothing to worry about. Had to wait a minute or so before getting stuck into this one 9/10

Apart from the pasty needing work this was a really nice product. The flavour was a clear standout. The wagyu beef was sensational as was the mixture of added ingredients. The mixed chilliās was a masterstroke and added real oomph to the flavour. Yes the price is up there, but we are talking waygu beef as the major ingredient and that needs to be considered. Yes the bottom pastry needed work but itās something that could easily be fixed. Overall I would easily have another one of these š„§ās, even if it was just for the flavour alone.
A huge thanks to operations manager Shannon for having me in and showing me around. As mentioned earlier this place is a massive operation and is only getting bigger. With the new store opening up Shannon was extremely busy, but still had time to give me the tour and share the owners incredible story. As mentioned this bakery is legendary for itās sourdough bread, pastries but donāt forget the š„§ās. The āBeef Pepperberryā one I had is worth the try and this place is worth the visit, with the selection of goodies here you wonāt be disappointed.
