After visiting the Eerringhi Bakehouse I decided to take the drive out to Singleton to visit one the local butcher shops. During my research of the Hunter Valley region I stumbled across a business called Springhill Beef Co. This is a cattle property that dedicates itself in producing premium, regeneratively farmed Angus beef. Then after doing some more research, I found out that owners Adam and Jodie purchased the Springhill Butchery in 2022 and the place does epic 🥧’s.
Springhill Butchery is located in John Street Singleton and is open Monday to Saturday. Adam and Jodie with the help of their children have worked there butts out to create a real paddock to plate experience. They weren’t born into farming, this is totally new to the couple, but they had a vision and dream to build a sustainable and profitable enterprise that could withstand the unpredictable nature of agriculture—weather extremes, market volatility, and external pressures beyond our control. Then about one and a half years ago they introduced 🥧’s into the shop and it’s gone a absolutely ballastic.
For a place that doesn’t specialize in 🥧’s the crew have created a great little menu. Yes the menu mostly consists of brisket. To be honest I’d driven out to Singleton for one 🥧 and one 🥧 only and that was the monster “cheeseburger 🥧”. This thing was massive and after first inspection I wasn’t quite sure where to start.
🥧 THE REVIEW 🥧
1. Value for Money – $10 is ridiculous value for 🥧 of this size and weight. This thing weighed a whopping 430grams, that’s absolutely massive. This is up there with one of the biggest pies I’ve had to review great value for money. This wasn’t a 🥧 it was a meal. 10/10
2. Meat/Fill Ratio – This beast was bursting out it was that full 10/10
3. Flavour – Fantasic !!! At first glance I didn’t know where to start, but the first bite was sensational. Slow cooked grass fed brisket, onions, ketchup, mustard and pickles, this 🥧 had everything. Every ingredient complemented eachother brilliantly, and the natural juices from the tender brisket gave this 🥧 extra flavour. Great job guys the overall flavour was fabulous. 9.5/10
4. Pastry – The overall pastry and pastry flavour was pretty great. The color and shape were both excellent. There was a little bit of shrinkage on the top bake and you can see where the brisket started to spill out on one side. The bake thicknesses and both bakes were very consistent. The only negative being the bottom and side bakes were a little pale in color. This is a direct result from the 🥧’s being cooked in the aluminum tins. The overall pastry was very good. 8/10
5. Serving Temperature – Perfect serving temp 10/10

Excellent product guys !!! I absolutely loved every bite of this 🥧 and didn’t want the experience to end. That grass fed brisket was amazing and the 🥧 was jammed packed. What I did love was all the other ingredients were the exact perfect blend and didn’t overpower the brisket. This is the best valued 🥧 I’d seen for a while. I’ve gotta say the two best cheeseburger 🥧’s I’ve ever had have both been from butcher shops and in the Hunter area. Terrific job team, this product absolutely rocket and I cannot wait to come back.
Like bakeries, butcher shops are the livelihood of most country towns and if your passing through Singleton, this is one place you don’t wanna miss. Apart from 🥧’s the meat sold here is exceptional, the rump I had was great. 100% add this joint to your travel plans.
A huge thanks to Adam and Jody for having me in. Also a big thank you to the store manager, Will and the other lads for being such legends. What Adam and Jodie have achieved in the last 2 1/2 years is incredible. This is a serious operation and these two are incredible operators. All the best guys you deserve every success that comes your way.
