Smoke Masters BBQ

A couple of months ago a ripping fella named Chad reached out to me. He saw my review of Full Throttle BBQ and mentioned he works for a new smoked BBQ joint in Canberra and asked me to pop out to meet the team. Smoke Masters BBQ is Canberra’s newest and only smoked brisket joint in town, also as it turns out they make 🥧’s. All I needed to hear was brisket and 🥧’s, and I’m all in and on my way.
Smoke Masters BBQ is located in the Canberra suberb of Fyshwick and as the name suggests it specialises in smoked bbq meat. Owner Scott is a bit of a Canberra legend, he was on breakfast radio here for many years. With a career change needed he dived head first into the brisket business and hasn’t looked back.
This place is fully licensed and open Wednesday to Saturday. This business has a real family feel tonit, with Scott’s son and son in law both working in the joint, along side his best mate Chad. There is also truck loads of seating so you can pop in, relax, and smash some food and wash it down with a few cold beers. Speaking of beers it was too early to have a coldie, so we decided to head over to the warmer and check out the 🥧‘s.
There is a variety of flavours here on the menu. Scott is constantly changing things up and playing around with new flavours. Let’s face it, this is a brisket joint so the only flavoured 🥧 I was going to review was a 🥧 filled with this tasty meat. My choice was easy I went with the brisket, cheese and jalapeño. These things sell out super fast, so I was lucky to get one. This thing smelt incredible and I was chomping at the bit to get started.
🥧 THE REVIEW 🥧
1. Value for Money – Look $10 isn’t going to be for everyone, but to you need to consider the quality ingredients that are in this 🥧. The brisket 🥧’s are filled with “Rangers Valley” WX7 wagyu meat and you won’t find better quality than that. Yes, $10 is up there but in my opinion it’s still very good value for what you get. 8.5/10
2. Meat/Fill Ratio – About 90% full and there was a decent amount of brisket in this 🥧. Maybe a bit more could have been squeezed in, but overall you’d be pretty happy with the meat ratio in this 🥧. 9/10
3. Flavour – The flavour in this 🥧 was bloody awesome !!! The brisket absolutely melted in your mouth and was divine. The cheese was the perfect amount and the jalapeño while it was hot, it didn’t blow you away. For me, it was the natural juices from the brisket that really made this flavour what it was. Loved every bite !!! 10/10
4. Pastry – The pastry was actually very really good. The first thing I noticed was the colour, it looked exceptional. The shape was above par and the top had limited shrinkage. The stability was fantastic and when tipped upside down the pie didn’t move. The top bake was almost cooked right through and the thickness was spot on. The bottom bake was a little underdone and a smidge too thick. Apart from these minor issues the overall pastry was very good. 8.5/10
5. Serving Temperature – Excellent serving temp. Straight out of the oven into the mouth. 10/10

This was a fantasic product and for a bunch of brisket dudes they have done a outstanding job. That brisket and the juices were absolutely sensational, the combination of cheese and jalapeño was the perfect blend. The quality of meat the lads use is first class, so you know your in for a treat with every bite. To be fair, there wasn’t much wrong with this pie with only a few tweaks here and there that were needed. Outstanding job lads you have nailed this one.
100% add this joint to your travel plans. If your’re a 🥧 lover, brisket lover, or just a lover of great food, then this is the place for you. The community of Canberra are so lucky to have a place like this operating.
A huge thanks to Scott and the team for having me in and Chad for reaching out to me. If you love anything brisket your going to froth on this joint. It’s a huge gamble setting up your own business, but Scott’s having a serious crack and doing awesome. What you’ve achieved in a short space of time mate is quite remarkable. Keep kicking goals mate and I cannot wait to see your next batch of flavours.
