Nimmitabel Bakery

(Nimmitabel NSW)

August, 2026

A few weeks ago I headed to to Melbourne for The Official Great Aussie Pie Competition. Instead of going down to Hume Highway I decided to take the scenic route down through Cooma and eventually ending up at Cann River, then onto Bairnsdale and eventually ended up in the Melbourne CBD. Not long into the road trip we stopped into the pretty little town of Nimmitabel where I caught up with Caroline and Will from the The Bakery Nimmitabel.

Nimmitabel is a historic, high-altitude rural town located 37 km south of Cooma on the Monaro and Snowy Mountains highways. The town has become famous for its Steampunk at Altitude Festival, which is held in May every year. Offering entertainment, creative costumes, live music, shopping and entertainment inspired by the steampunk genre.

The bakery has been around for over 60 plus years with Caroline and Will at the helm for a tick over 16 of them. These two legends had no baking experience when they took out the place, they worked in finance and corporate hospitality. Since taking over all those years ago they now are operating 3 other bakeries located at Cooma, Jindabyne and Adaminaby. All 4 locations are open every day except Xmas day and employs over 40 staff which is great for the region.

The Nimmitabel location is absolutely stunning and has a real warm and cosy feel to it. The exterior of the building is beautiful but inside is where it’s at. The cabinet display is beautiful and the place also has a stack of locally made products available. The selection of 🥧’s on the menu is terrific with all the old school flavours available. I did end up trying quite a few varieties but decided to review the popular “Steak, Bacon and Cheese”

🥧 THE REVIEW 🥧

1. Value for Money – $8.30 may seem up there, but prices between $7.50 and $8.50 are becoming the normal for most bakeries I’ve been visiting recently. While this 🥧 wasn’t massive it still was a decent size and weighed in above industry standard. Overall very solid value, without being spectacular 8/10

2. Meat/Fill Ratio – Totally full and zero complaints 10/10

3. Flavour – This particular SBC 🥧 was a very different and unique to anything I’d had before. The cheese was not visible to the naked eye but was 100% there in taste. The steak pieces were juicy and super tender, while the bacon was smokey and tasted great. Overall this was a very different type of Steak, Cheese and Bacon 🥧but it totally worked and the flavour was great 8.5/10

4. Pastry – The top color caught my eye straight away it was a nice golden color that stood out. The shape and shrinkage were both ok, but the top lid was a little un-stable. Both bake thicknesses were on point and, while the bakes itself weren’t far away. The top bake had a slight wet line, but this could have been a once off. Overall the pastry was pretty good, only a few minor points to work on, but nothing major or anything that couldn’t be fixed 7.5/10

5. Serving Temperature – A smidge hot, but nothing major 9.5/10

Overall Rating

🥧🥧 43.5/50 🥧🥧

This was a very solid product and one I would have no hesitations having again. The flavour was different, but highly effective, especially how the cheese was blended into the mix. I really enjoyed the overall flavor and to be honest there wasn’t much to work on in that department. The $8.30 price tag represented pretty good value and the pastry was well put together. A few minor points to tweak but nothing that cannot be fixed. If your a fan of the SBC 🥧 then this one is definitely worth giving a go. Also of your a vegetarian the “spinich and chee” was pretty awesome and well worth a shout out. Well done team, keep up the good work.

100% add this little country bakery to your travel plans. There is plenty of room inside and out to sit and relax and there’s a warm fire place to escape the winter cold and don’t forget to check out the massive elephant perched up next to the bakery.

Caroline and Will a massive thank you for having me in and showing me around your impressive bakery. Operating 1 bakery can have it’s challenges, but 4 is next level and yet you guys just roll your sleeves and make it work. What you guys have achieved considering your lack of baking experience is phenomenal and your 🥧 journey is far from finished. All the best guys and hopefully will see you again soon.

Nimmitabel is a awesome little town that’s we’ll worth the visit. If your heading down to the snow or heading south to Cann River 100% stop in and take a look at this pretty place.

As always thanks for the ongoing support and keep supporting 🇦🇺 bakeries and don’t forget to invite all your friends to the page.
