In preparation for my forthcoming 🥧 tour through New South Wales and Queensland I decided to squeeze one more review in before I left Canberra. So I made a few calls and arranged a visit to Knead Patisseire in the Canberra suberb of Belconnen to meet the team and smash a few 🥧’s.
Knead Patisserie – Canberra is located in the fresh food markets on Ibbott Lane Belconnen. The bakery has been around for over 15 years and the man behind this epic little joint is Andrew McCormack. This non baker spent the majority of his working career as a dietitian and then out of the blue an opportunity came up and he jumped head first into the baking game. 15 years and 4 highly successful stores later this legend is still here and making a very good fist of his new career.
Their flagship shop has a real industrial theme about it and the layout is quite impressive. The products on offer are just as impressive as the layout and the range available is sensational. The croissants and sweet savory’s caught my attention but it was the 🥧’s I was here for and it was time to get started.
Andrew and his team have created an awesome selection of flavours that will suit every 🥧 lover. For this review I went with an old favourite of mine and that was Andrew’s beef 🥧. It’s one of his most popular flavours and it looked terrific.
🥧 THE REVIEW 🥧
1. Value for Money – $9 is 100% creeping up there but this was a decent sized 🥧 in depth and diameter. With the cost of goods and ingredients reaching all time highs, 🥧’s in the $8 and $9 dollar range are becoming the normal 8/10
2. Meat/Fill Ratio – About 90% full, there was a couple of spots here that could have been fillled, but overall more than satisfactory meat to fill ratio. 9/10
3. Flavour – Pretty good !! The slow cooked braised beef was delicious and cooked to perfection. The Coopers stout added some real flavour and blended in with the beef perfectly. Overall Andrew has created a basic beef 🥧 that’s packed with flavour. 8/10
4. Pastry – The pastry was superb and easily my favourite part of this experience. The pastry tasted sensational and the stability was super impressive. Both top and bottom bakes couldn’t be faulted. The bottom was a little bit soft, but this was only minor. Great job Andrew well done on this pastry. 9/10
5. Serving Temperature – Perfect serving temp, zero issues here 10/10

Andrew and his team have done a really good job with this product and it’s one 🥧 I could easily have again. All scoring categories were super consistent, but for me, the pastry was my favorite. The bakes and bake thicknesses were perfect and it’s been a long time since I’ve seen that. Overall not a great deal to work on and as mentioned above Andrews team have done a sterling job. I also loved his butter chicken 🥧 !!! The flavour in that one was beautiful and the pastry couldn’t be faulted. Highly recommended.
If your’re in or around the Canberra area you’ve gotta add this place to your list. It’s a hidden gem that should be experienced by every 🥧 and food lover. The sourdough loaf was outstanding, so add that to your shopping cart.
Andrew thank you so much for inviting me into your impressive patisserie , and allowing me to share your story. The degree in contrast between your past career and now is crazy and the people of Canberra are lucky you made that choice. As a dietitian, you make a very handy baker and you deserve every success that comes your way.
