Evoke Bakery

I received a call a little while ago from ABC radio Canberra asking me if I wanted to team up with them in search for Canberra’s best 🥧. Little did I know this task was going to be massive. From my own research and listener feedback there are some quality 🥧’s around the nations capital, also a 💩 tonne of bakeries to visit.
I’d already reviewed two bakeries on my previous visit to Canberra, this included Ainslee Bakehouse and Griffith Butcher but this new mini tour will see me visit around 18 local bakeries in total, with the next on the list being Evoke Bakery
Evoke Bakery could be considered one of Canberra’s newest bakeries, opening its doors in 2022. The bakery is owned and operated by two ripping lads and this business relationship could be best described as left field. Jayson has been around the Canberra baking scene for over 18 years, while Tom’s background is in accounting. This odd business partnership has flourished and this little bakery has gone from strength to strength, and now employs over 15 staff and open 7 days a week.
The bakery is located in the Curtin shopping complex, while only a small bakery the lads have created a epic vibe here and the cabinet display is first class. Every food item looked and smelt insane and I had my eye on numerous items, but I had to remain focused and choose a 🥧 to review.
Evoke has a great selection of 🥧’s on offer with all the usuals on the menu. After having a decent look at the menu I ended up choosing the “Lamb Rosemary”. The boys told me the ingredients were a little different to your usual L&R so I was keen to give this 🥧 a go.
🥧 THE REVIEW 🥧
1. Value for Money – $8.50 is creeping up there on the price department, but in my opinion very affordable. The 🥧 was a decent oval shaped and the depth was satisfactory as well. Overall on the high side but still well priced 8/10
2. Meat Ratio – Totally full !!! No issues here, plus the lamb chucks were big 10/10
3. Flavour – Apart from being a little too salty this flavour was perfect. Slow cooked lamb, thyme, rosemary, paprika, peas, salt and pepper. The slow cooked lamb was gorgeous and the gravy mix was excellent. The rosemary was the perfect amount and complimented the 🥧 well. Great job lads 9/10
4. Pastry – A mixed bag in the pastry department. Both top and bottom bakes a little thick and underbaked. Top had a decent chunk of shrinkage. The pastry flavour was really good as was the stability, when tipped upside down the 🥧 didn’t move a inch. Overall the pastry had a good even colour throughout, but just not enough bake 7/10
5. Serving Temperature – Serving temp was perfect no issues at all 10/10

Another quality product from a quality bakery. The flavour was easily the best part for me. The lamb chucks were huge and the rich rosemary gravy was beautiful. Yes $8.50 is on the high end, but the quality is clearly evident in this 🥧. The thickness and bake bought the score down a little, but these points can easily be fixed. Would I have another one of these 🥧’s ? hell yes !!! Great job lads.
A huge thanks to Jayson, Tom and the team for having me in. The boys are absolute legends and their products are awesome. It takes balls of steel to leave a solid job and open up your own business and these guys are doing a sterling job. This hidden gem is 100% worth the stop in, another quality bakery to add to your list.
