The search for Canberra’s best 🥧 was at the finishing line, with one more bakery to visit. As mentioned in last weeks review, I’d probably missed a few hidden gems here and there, but will visit these ones later in the year when I return to the area.

Lucky last on the list was Cedar Husk Cafe. Cedar Husk Cafe is located at 1/21 Iron Knob St Fyswick opposite the entrance to DFO and is open 7 days a week. The bakery has been around for a while, but new owner Mohamed officially took over the place last September and has the place humming.

This legend is more known as the “Nutman” of the Fyswick markets. That’s where he’s been for the last 16 years selling all things nuts. Like all quality businesses you need a good team and the crew in this bakery are sensational with all of them working together to achieve one common goal “Great Food” The bakery has also introduced a whole stack of new products, including gluten free cakes, sweets and a Lebanese theme bbq and breads. After meeting the staff and getting the tour, it was time to get down to business and choose what 🥧 I was going to review.

I’m not going to lie, I sampled about 10 🥧’s during my visit, but there was one particular flavour that stood out and got me back for seconds !!! This might create a bit of controversy amongst traditional meat lovers, but it was the vegaratian 🥧 that I loved the best and the one I wanted to review. This 🥧 was a “Blue Cheese and Mushroom” by gee it looked and smelt fantastic.

🥧 THE REVIEW 🥧

1. Value for Money – $7 represented terrific value as this 🥧 was a decent size in depth and diameter. Zero issues at all with this price tag. 9.5/10

2. Meat Ratio – 95% Full a couple small air pockets here and there, but overall you would be very happy with the fill in this 🥧 !!! 9.5/10

3. Flavour – Absolutely sensational and this is coming from a genuine meat lover. This vego 🥧 had the lot blue cheese cooked with thickened cream, onions, white wine vinegar, garlic, thyme and delicious fresh mushrooms. OMG the flavour was outrageous, the mushrooms were fresh and you could taste every ingredient with every bite. The blue cheese was stunning and didn’t overpower the other ingredients. The baking crew have nailed this one. Awesome job !!! 10/10

4. Pastry – Very impressive. This pastry was almost perfect. Color shape, shrinkage and stability were all perfect and when this 🥧was tipped on its head, it never moved. The pastry was baked well and also had a nice flaky taste. The only negative was one side was a smidge too thick and slightly underbaked. Overall the bakers have done a great job with this one. Excellent stuff guys !!! 9/10

This was a first class product !!! This would normally be the last type of flavoured 🥧 I would review or sample, but I absolutely loved this 🥧. The scores were very high right across the board and deservedly so. The flavor was incredible as was the pastry’s overall flavour. Nothing really wrong with this 🥧 at all. The baking team have done a sterling with this one. It’s been a very long time since I’ve reviewed a vego 🥧, in fact this might be my first. This bakery is a must visit and the new foods lines that are happening will rock your socks off. Add this hidden get to your 🥧 list for sure .

The big fella Mohamad and his team, a massive thanks for having me in. For a nut man your doing a sterling job with this bakery. What stood out was your openness to learn, improve and get better with every aspect of this business and I love that. What you have done to this place since you took over is a real credit to yourself, your family and your incredible staff.

Your “Mushroom and Blue Cheese 🥧” was the best 🥧 i sampled during my time in the nationals capital. Who
would have thought after eating countless 🥧’s the best 🥧 in my opinion was a vegetarian flavour. Congrats to you and your baking team, great job guys. The pastry consistency across all your 🥧’s insampled was first class.

I would like to thank all the bakeries I visited for having me in, allowing me to share their 🥧 journeys, but most importantly there warm hospitality. This area has some sensational 🥧 joints, but most importantly all the owners, bakers and staff were dead set legends. I had a blast visiting every bakery, but most importantly just sitting down and chewing the fat with these amazing humans was my favourite part.
