Brown Sugar Bakery
(Forrester’s Beach NSW)
April 2025
After visiting countless bakeries in a short period of time, i decided to have a few PFD (Pie, Free, Days) before my next lot of visits. Upon resumption the first bakery on my hit list was Brown Sugar Bakery.
Brown Sugar Bakery is located at Forrester’s Beach and is open 7 days a week. This is a proper family run turn out. Owners Paul and Julie have had this bakery for almost 5 years and now have their sons Jacob and Jonathan are in the bakery assisting them. Jacob has recently competed in the prestigious LA Judge Award where he finished a close second. This was a fantastic effort considering he was up against some of the best young bakers in the country.
With some quality bakers in this joint, you would expect some quality products and that’s exactly what your going to get here. The breads and pastries looked sensational and the fresh croissants were absolutely divine. While my eyes may have been wandering all over the place, i had one eye on the nearby 🥧 warmer and the golden colour of those 🥧’s.
The team have created a sensational list of flavours on the menu here. All the usual bakery favoutites are on the list, plus a fantastic range of gourmet flavours to go with it. After taking what seemed to be an eternity to make a decision, I ended up choosing the Brisket, Cheese and Chorizo. This thing looked terrific and I couldn’t wait to get started.
🥧 THE REVIEW 🥧
1. Value for Money – $10 might seem expensive, but brisket isn’t cheap and this 🥧 weighed in at 300 grams which is 40/50 grams higher then the industry standard and in my opinion very good value. This would be a different story if it weighed in lighter but it didn’t. This wasn’t just a 🥧 it was a meal and one that was well worth 10 bucks. 8.5/10
2. Meat/Fill Ratio – Totally full and full to the brim of delicious brisket. 10/10
3. Flavour – The flavour in this 🥧 was bloody epic !!! From the very first bite I was hooked. The brisket was cooked magnificently and the pieces were huge. The amount of cheese in this 🥧 was perfect and the chorizo was just hot enough not to scare you away. The juices from the brisket created a natural sauce and stopped the brisket from being dry. Then the added BBQ and bourbon sauce tipped this flavour over the top. Awesome job team !!! Loved this flavour. 10/10
4. Pastry – As mentioned earlier the first thing I noticed was the colour of these 🥧 tops. It was golden and so bright it could have lit up the evening sky. The shape, stability and shrinkage where all acceptable. Both bakes top and bottom had slight wet lines (pics will show) The bake thicknesses were also very close to the money. I particularly liked the pastry flavour it tasted sensational. Overall the team have done a really good job with this one. 8/10
5. Serving Temperature – Perfect serving temp 10/10
Overall Rating
🥧🥧 46.5/50 🥧🥧
This was a seriously nice 🥧. I’d been smashing quite a number of brisket 🥧’s on this tour thus far and the thought of having another one had me a little bit worried. I had no reason to be worried as the flavour and texture in this 🥧 was incredible and I could’ve easily had another one. Yes some would say $10 is over the top and too expensive but you need to consider the weight in this 🥧 and it was totally full. The pastry was almost spot on, just a couple little things to work on, but nothing major. Overall the team have baked a fantastic product, I can now see why this 🥧 is a big seller. Great job guys, well done.
You 100% need to add this place to you 🥧 list, it’s a cracking joint and one that must be visited. The biggest issue your going to have is deciding what to have.
This was a really enjoyable visit and I cannot thank Paul, Julie and the team for having me in. Paul and Julie run a quality operation and the numerous awards they have won back this up. Paul and Julie should have their feet up, but they are in the bakery 7 days a week and the hours these guys work is crazy. All the best guys you deserve every success that comes you way. Looking forward to see next month at the trade show.
