Wildflower Artisan Bakery & Cafe

With Elaine’s Gourmet Pies and Three Mills Bakery knocked over, it was time to hit one more bakery before the days end. The next bakery one on the list was
Wildflour Artisan Bakery & Cafe. This place is another one of the big guns around the Canberra area and like Three Mills it is well known for its sourdough and pastries.
Wildflower has 3 locations around Canberra and all stores are open 7 days a week. Upon my visit, I was greeted by one of the owners Trent. Before I met this legend I was fixated by the impressive cabinet display and more particularly a huge range of decorated croissants looking straight at me. Trent then informed me these masterpieces were all painted in various toppings and filled with different flavoured custards.
The Fyshwick location is stunning and has good seating options inside and out. The menu is extensive, creative and all the food is made fresh in the building by the professional team of bakers and pastry chefs.
I was still getting massively distracted by the painted croissants, so with that in mind I thought I’d better get a 🥧 into me ASAP before getting stuck into them.
There’s a decent selection of 🥧’s on offer here and after struggling to make a decision, Trent stepped in and suggested I give one of their most popular 🥧’s a go and that was the “Beef Brisket”
🥧 THE REVIEW 🥧
1. Value for Money – $8.50 for a 🥧 of this size and ingredients that filled it was very reasonable and affordable. As you would expect the 🥧 was a decent size in both depth and diameter. Overall very well priced 8.5/10
2. Meat Ratio – Apart from a piece missing out of one corner this 🥧 was totally full. No complaints or issues !! 9.5/10
3. Flavour – The actual flavour was really really good. The pulled beef brisket was extremely tender and the 🥧 was filled with a decent amount of meat too. The gravy sauce with added onion had a sweatness to it which complimented the brisket well. This was a beautifully flavored 🥧 !!! Great job guys I loved the flavour 9/10
4. Pastry – Once again the pastry was a real mixed bag. Nice flake on the top and the pastry had a really good colour. There was no clear shrinkage but the 🥧 could have had be a bit more uniform (shape) to it. The top bake was too thick and was under baked (photos will show). Overall a few things to work on, but nothing that cannot be fixed. 7/10
5. Serving Temperature – A little hot but nothing major has to wait for about a minute before tucking in 9/10

Overall this was a really nice product. The scores were pretty consistent across the five categories. The 🥧 was priced well, it was almost full and the flavour was beautiful. The pastry needed a little bit of work, but this was nothing major and only small points that could easily be fixed. I would have no hesitations recommending this particularly flavored 🥧. Good job team.
A massive thanks to Trent and his team for having me in. This joint is a massive operation and I cannot thank Trent enough for his warm hospitality and taking the time to show me around. This bakery is 100% worth checking out and just to confirm those painted croissant looking things tasted sensational. This is another bakery to add to your own 🥧 journey and trust me you won’t be disappointed.
